Healthy Potato Chips - Microwave

Ingredients:

1 red potato

Procedure:

  1. Slice the potato w/o peeling it into even, little thick slices
  2. Grease a microwave safe plate and arrange the slices on it
  3. Microwave on hi for 2 mins, take out, flip it over and microwave it again for 2 mins.
  4. Check if done.. they'll be crisp! If not keep for another 30 secs to a minute.
Voila we're done! Garnish with some salt and chilli powder and snack on it!

Toasted bread cheese kurkure

Ingredients:(serves 2)

  1. Chesse, parmesan, shredded or powdered
  2. Finely cut chillies/capsicum
  3. onion - 1 small, chopped finely(u can do it in the blender)
  4. 2 tsp milk
  5. Bread slices with ends removed - 4
  6. salt to taste
Procedure:

  1. Mix the cheese with the green chillies , onions and milk and salt, keep aside
  2. Take the ends off the bread slices and place little of above mixture on top of one slice, wet the ends of the bread and roll it and seal it.
  3. press the roll between your palms to flatten it...careful not to break the bread or make it soggy
  4. heat a pan and grease with butter and place the roll on it and toast it till its golden brown, turn it over and do the same
  5. Repeat for all slices
Enjoy with tamarind chutney or tomato ketchup.. you can have it just as it is too!

Boiled sweet potato

This is a popular snack for those who like the sweet and sour combination

All you need is sweet potato boiled and mashed, its easier boiled than the usual potatoes..and mix it up with little bit of chilli powder and salt and amchur powder, place in a bowl and pour a reasonable amount of tamarind chutney over it.. and beat some curds with some sugar(very little as the potato is already sweet) pani puri masala.. and little lime juice.

Pour over the mixture we already have.. and u have a snack ready!

Aloo Toast

Its similar to Corn toast, but it needs a little bit more to be done

Ingredients:

  1. 1 Aloo - boiled and mashed
  2. Onions, cilantro -finely chopped
  3. chilli powder, salt, chat masala, pani puri masala, amchur
  4. Tamarind chutney
  5. Bread - 4 slices (for 1 person)
Procedure:

  1. Mash the boiled aloo and add the above poweders and mix well with hand
  2. To this add onions and cillantro
  3. Spread over one side of bread, and toast both sides (yes toast the side with aloo on it so to a reddish brown in color)
  4. Put the other slice to cover it and toast the open side to a golden brown color
  5. Top off with tamarind chutney and some onions.. after cutting it into triangles that is!
An interesting alternate would be sandwiching the aloo between the slices and placing in a sandwich maker.. and again top off with tamarind chutney and onions..

Corn Toast

Ingredients:

  1. Corn, preferably with butter sauce, if not, just the canned one will do
  2. Onions
  3. Cilantro
  4. Tamarind chutney
  5. Bread slices 3 (dish for two)
  6. salt, chilli powder, chat masala, amchur

Procedure

  1. Grind the corn, onions and cilantro together with salt and chilli powder and other powders
  2. Place this on the bread and seal it with another slice, and apply paste on this bread slice (that u have sealed with) and seal it again with another slice for a three tier
  3. Put a little butter on a frying pan and toast on both sides of our three tier.
  4. Take it out slice it into two triangular three tiers and toast the freshly cut corner too
  5. Arrange on plate and spread tamarind chutney on top of the tiers.. and sprinkle liberally with finely chopped onion all over the plate and serve!
Note: You can marinate the onion with salt, chilli powder and lemon juice for extra zing taste!

Boiled Chickpeas

You must have wondered what the boiled chick peas is that I keep mentioning in the posts..

well simple enough and healthy and filling side dish..

Just take a can of garbanzo chickpeas and drain most of the water..(keep very little about 1/4 cup) , put tadka (oil and mustard seeds) and put the chick peas into the pan..stir once in a while, while they cook.. and finally before taking them out.. add 1/2 tsp sugar and a pinch of salt.. (add more want if you prefer it to look soupy) !

Tikki Burger

This one is my fav!

Ingredients:

  1. Burger buns
  2. Hash browns -shredded or a whole potato
  3. Onions finely chopped and marinated in lemon juice salt and chillipowder for atleast 5 mins
  4. Chilli powder, salt, chaat masala, dry mango powder
  5. Tamarind chutney
  6. Oil/butter - 1 - 3 tsp
Procedure:

  1. Take the potato and boil it peel it and mash it else if you are using hash browns.. heat in microwave for a minute till soft and add the powders and salt
  2. Roll out into balls and flatten between palms
  3. Grease pan with oil/butter
  4. put the flattened potato patty and shallow fry till reddish brown on each side.
  5. Toast the burger buns also if desired
  6. Place the tikki(patty) on the bun and top off with the finely chopped , marinated onion
  7. spread some tamarind chutney on the other half of the bun and place on the arranged bun..and voila! u have a tiki burger!
Note: Goes well with all milkshakes and juices!

Bruschetta

Its again with bread..coz thats the most common thing we find when looking for a quick snack

Ingredients:
  1. Burger buns - u can use normal bread too.. I just like the shape of the buns
  2. tomato - 1 -2 / 4 slices
  3. cilantro -few sprigs
  4. lemon juice
  5. salt and chilli powder, dry mango powder, chaat masala.. all to taste
Procedure:

  1. Toast the buns on both sides with butter on a pan and keep aside
  2. Cut the tomato into fine pieces and add finely chopped cilantro to it along with salt and other spices.. sprinkle lemon juice over it.. liberally!
  3. Wait on it for a couple of minutes.. and place the tomatoes on the toasted bread slices. Voila! u are done!
Note: Serve with boiled chickpeas.. goes well..

Cheese Toast

This has to be baked! ..

Ingredients:

  1. Bread Slices - each slice has to be cut to two..and 4 per person is my typical count!
  2. Cheese, shredded or singles
  3. Salt, chilli powder (optional)
  4. Oven pre-heated to 400 F
  5. Tomato ketchup
Procedure:

  1. If shredded cheese is being used, the u can mix some salt and chilli powders to make it more spicier, if singles are being used then the spice can be added later
  2. Place singles/shredded cheese on the slice and put in in a oven safe plate in the oven.
  3. Cheese typically takes 5 minutes at 400 degrees, take it out and spread tomato ketchup drop..If singles were used, mix the chilli powder in the sauce before spreading it...
Note: Ketchup is optional too! Cheese alone too tastes just as good.. Serve with soup.. or boiled chickpeas

Tiffins...

Simpler the better...

  • Cheese Bread Bites

Ingredients:

    1. Bread slices - Each makes 4 or 5 bites .. so decide how may u want!
    2. cheese singles
    3. balasmic vinegar .. or substitute with any bread spread that is a bit tangy to taste.
Prodedure:
    1. Toast the slice of bread on both side with some butter in the pan.
    2. Place the cheese slice on the bread and microwave it till the cheese melts a bit (App 30 seconds)
    3. Fold the bread slice into half and press together so that the ends stick for good
    4. Cut the folded bread into four longitudinal bits..
    5. Arrange on plate and with a teaspoon take balasmic vinegar and pour over the bits...1 tsp per 4 bites is enough for me.. but u can add more if u like the taste
    6. repeat for all the slices, serving with cut tomatoes/onions..Enjoy!
